Background
Information:
Sesame may be the oldest
condiment known to man. In any event, it is probably the oldest
crop grown for its edible oil. Records of sesame production in
the Tigris and Euphrates valleys date back to 1600 b.c. In the
tale of Ali Baba and the forty thieves, ‘Open Sesame’ was the
secret password to open the treasure cave. Late in the 17th
and 18th centuries, slaves brought the seed to America.
In parts of the American South sesame is still known as benne.
Physical Description:
The sesame seed plant
is an annual with a branched stem that grows to a height of 0.6
– 1.2 m (2-4 feet). The small seeds vary in size up to 3.5 mm
(1/8 inch). Color may range from yellowish white to red, brown
and black. Hulled Sesame is pearly white. It has a rich, nut-like
flavor when roasted. Hulling or Decorticating is the process of
removing the outer husk.

Uses:
In the Western World
Hulled Sesame is best known as a topping for hamburger buns. Sesame
Oil is widely used in Asia. Tahini is a paste made from ground
sesame seeds. It is also an ingredient in Halva. Its high protein
content makes sesame popular with the health food industry.
