color; nut-like flavor and firm texture.

Cicer arietinum
History / Background:
Chickpeas were domesticated
in the Near East and were cultivated with the cereals as early
as the seventh millenium BC. They quickly spread to the Indian
subcontinent where they became a principal pulse crop and a dietary
mainstay. They were introduced into the western hemisphere soon
after Columbus.
Types:
Chickpeas are classified
as either desi or kabuli types. The desi types are
characterized by smaller, angular, and pigmented seeds; whereas
the kabuli types are characterized by larger seeds that are more
rounded and lack pigmentation. The desi types predominate in the
Indian subcontinent while the kabuli types predominate elsewhere.
Mexico is a major producer of high quality kabuli types, also
known as ‘Garbanzos’. Kabulis are also grown in California, Washington,
Idaho and Canada.
